Victor Liong, the owner-chef behind the revered Lee Ho Fook (also Sydney’s now-closed Chuuka) is known for his innovative Chinese dishes and razor-sharp attention to detail. In 2024, alongside new laidback diner Silk Spoon, he’s set to open Bossa Nova Sushi with serial restaurateur Con Christopoulos (Kafeneion, City Wine Shop, The European). The 26-seat sushi train will open at 70 Bourke Street, in the former home of Greek taverna Kafeneion.
